Could I have played this differently ? ( apart from folding, that is ), Should I have perhaps just called his 200 post flop bet ? I doubt that the outcome would have been any different, considering I flopped my set and river'd a boat. 100% cooler hand.

I like the raise preflop and I like that you raised the flop when you hit a set.
If you don't raise the flop, then you're going to price in any opp that could have a heart draw or even a broadway straight draw. That's something that you do not want to do, especially with that many in the hand... as one of them could easily have two hearts or two broadway cards.

If you flopped a full house, then I'd just flat it, to keep the other opps in... but with a set on a board with a flush draw and a broadway straight draw, raising the flop is the correct play.
